My research interest is multifaceted, spanning through Molecular Microbiology and Biotechnology, Food Science and Nutrition. I am keenly interested in the microbial genomic structure and function of different traditional spontaneously fermented food ecosystems in West Africa; metagenomic and high-throughput sequencing (based on platforms such as illumina MiSeq and NextSeq), as well as metabolomic profiling and metatranscriptome analysis, gut microbiota, antibiotic resistome in the food chain supply, and micronutrient improvement in artisanal fermented food products with the use of starter cultures.
